Dark chocolate is rich in antioxidants, and our chocolate recipe is tweaked with the goodness of maple instead of sugars, and no dairy.. making it a fantastic healthier alternative when those sweet cravings visit.
Create gloriously, with a multitude of toppings and ingredients. Our simple chocolate recipe version is laced with oh so delicate rose petals, for a 'turkish delight' experience.
What you'll need:
- 1 Cup Organic cacao butter buttons
- 1/2 cup Organic natural cacao powder
- 1 Tsp vanilla extract
- 2 Tbsp Organic maple syrup
- Pinch of sea salt or himalayan pink salt
- Cooking Thermometer, saucepan, heat proof bowl, rubber whisk or spatula, shallow baking tray, baking paper.
Your choice of decorative / flavour garnishes. Try:
- Rose Petals
- Slivered or flaked almond
- Dried blueberries
- Organic goji berries
- Organic Pepitas
- Organic Cacao Nibs
- Toasted coconut
- Candied ginger
Method:
- Line your baking tray with non-stick baking paper, and have your ingredients and thermometer at the ready.
- Add 1/4 water to your saucepan, and place on the stove
- Assemble your chocolate making bowl over the top, ensuring the bowl well overlaps the edges of the saucepan.
*Important Note* - You don't want any water or steam to escape or enter your chocolate, so ensure it is 100% dry. Turn the heat on low to medium.
- Add your organic cacao butter buttons to the pan, and attach your food thermometer (if applicable). It's important to heat the butter slowly to ensure you don't overheat your buttons.
*Important Note* - You butter temperature should not exceed 48° Celcius / 118°F, or it may not set correctly, or dis-colour.
- Carefully monitor your buttons and temperature, when it reaches approximately 46°C and your buttons are almost fully melted, remove from the heat and place your bowl on a tea towel on a cool bench.. or board, ensuring no steam enters your bowl.
- Using your spatula or silicon whisk stir in your organic cacao powder until combined and smooth.
- Add in the salt, and stir constantly until you can feel it's dissolved. Then add vanilla and maple syrup.
- At this point your chocolate should be smooth and liquid. If required, place back on the saucepan for just a few moments to bring back to this flowy state.
- Now you're ready to pour the chocolate onto your lined baking tray. Use the spatula to gently spread the chocolate, or gently tip each side to allow it to flow and thin out to what will become your delicious choc bark.

As the chocolate settles and starts to cool, you're ready to add your decorative toppings. For heavier and larger toppings, you may like to wait a few extra minutes to ensure they sit nicely on top of your choc bark.
- Create Gloriously!
- Once you're happy with your chocolate recipe creation, pop into the fridge to set for a minimum 30 minutes or overnight.
- When it's completely set to nice and firm, you get to joyfully break up your chocolate into bark chards! If some fall in your mouth.. Oops, that's ok!
