Strawberries & Cream Cheezecake Slice | GF | DF

We all love a little decadence in our lives, but it tastes even better when it's a healthier treat that ticks all the boxes. 

This scrumptious Strawberries & Cream Cheesecake slice, is not only gluten free, it's also vegan and refined sugar free. Tick tick!

We've made ours into slices, but you can also make these gorgeous little strawberry gems pressed into individual silicon cups for a glorious treat for one!

You can also change out the fresh strawberry's for really any summer fruit or berry you like.

What you'll need: 

Base

Filling

  • 1 1/2 cups raw cashews (soaked for 30m + in boiling water)
  • 1/3 cup coconut oil - melted
  • 3/4 cup coconut milk 
  • 1/4 cup maple syrup
  • Rind of 1 lemon 
  • 1 Punnet of strawberries sliced 

  •  a silicon tray or lined tray approximately 26cm x 19cm

Method:

  1. Prepare your cashews by soaking in boiling water in a large bowl in advance for a minimum 30 minutes for a smooth result for your filling.
  2. Now In a food processor, combine all base ingredients and with chopping attachment, process until dates are finely chopped and linseeds are ground, scraping the sides at intervals.. until a nice fine crumb is achieved. Approximately 2-3 minutes. 
  3. Scoop your base into the silicon tray, and use a large metal spoon, or small glass to press firmly into an even base. Refrigerate while you prepare your filling.
  4. Prepare your coconut milk if using glorious foods coconut milk powder to a ratio of 50% powder to warm water. 
  5. Melt your coconut oil and clean your processor vessel ready for your filling
  6. Drain your cashews when soft, and add to the clean food processor. Use cutting attachment to reduce your cashews to a very fine crumb, or ideally a cream. 
  7. Now add all wet ingredients except your fruit, to your processor and continue processing until your filling resembles a thick cream texture with no lumps. 
  8. Get your base out of the refrigerator and add the cream filling on top. Pop into the freezer on a tray briefly while you slice your strawberries to help firm the filling. 
  9. Once sliced you're ready to position your fruit to complete your Strawberries & cream match made it heaven. 
  10. Pop it back into the freezer for approximately 20 minutes to set, or refrigerate covered overnight until firm enough to slice to your desired portions.

 

Store unused portions n freezer in an airtight container, and remove for approximately 20 minutes to allow to defrost to the perfect temperature. Or microwave for 30 seconds if you can't hold out that long.
